Wine. Clearly

Well, today the wine has finally settled with no more bubbles - around 5 days later than expected, but patience, patience.

I’ve now initiated stage threel Degassing, Stabilising and Clarification. Basically I had to stir in some Potassium Metabisulphite, and then agitate the wine in potentia for a couple of minutes to release unwanted CO2. After that, it was adding Potassium Sorbate and the fining agent. This will basically clear up the wine, removing cloudiness etc. Two weeks now until stage four - bagging or bottling (in this case bottling). That’s basically it and it’s ready to drink. Hopefully it will actually be drinkable too!
